Ruben Santana is the owner and pitmaster of Bark Barbecue, a Texas-style Barbeque with a Dominican twist.

As a Queens local of Dominican descent, Ruben smokes brisket, ribs, and other meats in the timeless Texas design, while including his own Dominican flair to the spice rubs and sides, which include arroz con gris, maduros, and more.

And keep in mind, it's not burnt or charred, it's bark.

    1. @UncannyLiving no the issue is that many BBQ restaurants charge by the pound. If I bought a pound of brisket and half of it was fat I’d be pissed.

  5. Just checked this out last weekend. So happy for this guy Ruben, he has truly done something great. Tried the pork ribs, chicharron & brisket, it was all better than I imagined. The mac was truly the best I’ve ever had.
