Ohhh I’ve heard of vegan kimchi. I’m no expert but I think it just omits any of the fish sauce that goes in! I’m not sure how different it tastes to regular kimchi but can’t hurt to try 🙂
If you want the “briny sea” flavor without any fish – only kombu seaweed and dried shiitake mushrooms, rehydrated in water and mixed with rice flour to become the binding agent for the seasoning, so it all sticks to the veggies. I have tried this method, admittedly you may still get a mild fishy-like scent to the kimchi because, well, it’s seaweed. But, it’s completely vegan and together with shiitake mushroom, makes a very flavorful component to the kimchi paste. The usual seafood components like fish or shrimp sauce are mainly to add additional saltiness and depth of flavor. In a vegan kimchi’s case however, substituting the same amount of seafood seasoning with plain sea/kosher salt works just fine, and keeps the process simpler.
