Lamb Shank Osso Buco with Karen Akunowicz

Karen Akunowiscz, /owner of Boston's Fox & the Knife and Bar Volpe, makes her version of osso buco, a classic braised Italian meal. Karen uses for her osso buco and includes increased harissa in her braise for an unique flavor, and makes an abundant saffron and an intense herb gremolata spiked with ginger.

  2. Her voice has charms. I hope I can try this recipe using beef shank.

    1. @Daniel Hollingsworth Never know. Chefs nowadays aren’t like the ones that I worked under when making my bones. They’re nice to their staff and almost never throw plates or even food at their cooks.

      Sounds crazy, I know, but I’ve seen it. The industry has lost some of its rigor and discipline.

  4. Osso buco refers to the cut of the meat as much as the recipe. She made lamb shanks. They look great, no need to try to be fancy in the wording for the sake of it…
    Oh she was on top chef? Go figure…

  5. She’s very cool I love her. Also love this series – the fact that all the recipes are tried and tested and are famous dishes at famous restaurants lets you know it’s a damn good recipe
