5 Minute Challenge – Cacio e Pepe with Mittens On

Karen Akunowicz, & owner at Fox & the Knife in Boston, MA says she can eat cacio e pepe (Italian for cheese and pepper) every day becauese it's so easy to make. So we asked her to make it in the Test Kitchen, however with a massive twist: she needs to do it wearing mittens, in 5 minutes or less. Can this skilled pull it off without the use of her fingers? Or will she blow it?

  3. This is like the video you make after a bong sesh that you think is profound….but then you erase it 3 days later

  4. Dont’want to sound like a pretentious person, but the callenge of making cacio e pepe is making a cream which does not form filaments. The cheese has to be hot enough to blend in with the water starch, but it must not melt. Cacio e pepe is literally about that. You get some boiling water, let it cool for a minute and mix in the cheese with some pepper. After turning off the water you take out the pasta and mix everything with the stove turned off. Sounds easy, but it took me five or six times to get it right. Using butter is simply cheating, as the butter does not form filaments which somewhat ruin(?) the dish, and it alters the original taste of the recipe.

    1. Right, also salt is not necessary since pecorino romano cheese is super salty. Less is more, stick to the 3 ingredients : pasta, cacio, pepe. stop.

  5. wtf buccatini and then butter why the hell does she use BUTTER????? I am not even Italian and that hurts my soul. That is not a cacio e pepe

  6. She seems nice, but Vice is really running out of options here with this boring/unnecessary challenge.

  7. Not gonna lie, that does not look good at all. She barely used any cheese at all and the cheese is clumpy. Not creamy whatsoever. Not only that she made a completely different dish from cacio e pepe. She said it herself, cacio e pepe means cheese and pepper so why did she throw in half a stick of butter?
