Agri Mutton Rassa | आगरी मटन रस्सा | Mutton Curry | Maharashtrian Recipe | Sanjeev Kapoor Khazana

Agri food is understood for its spices and heat! This recipe is exactly that! Filled with flavours and scent. A best mix to rice or bhakri!

AGRI MUTTON RASSA

Active ingredients

750 grams mutton, cut into 2 inch pieces on the bone
4 tbsps oil
10-12 garlic cloves
1 inch ginger piece, approximately chopped
3-4 green chillies, stemmed
1 cup grated dried coconut
1 cup fresh coriander leaves
8-10 black peppercorns
3-4 green cardamoms
1 black cardamom
1 inch cinnamon stick
2 bay leaves
3 medium onions, sliced
Salt to taste
2 medium tomatoes, sliced
1 tsp turmeric powder
1 1/2 tablespoons agri koli masala
2 medium potatoes, quartered
2 tablespoons chopped fresh coriander leaves
1 tablespoon lemon juice
Fresh coriander sprig for garnish
Bhakri for serving

Approach

1. Heat 2 tablespoons oil in a pan. Add garlic, ginger, green chillies and sauté for a couple of seconds.
2. Include dried coconut and sauté till golden brown. Include coriander and sauté for 2 minutes. Allow to cool somewhat.
3. Transfer in a mixer container, include 1 cup water and grind to great paste.
4. Heat remaining oil in a pan. Add black peppercorns, green cardamom, black cardamom, cinnamon, bay leaves and sauté till aromatic.
5. Include onions, salt and sauté till the onions turn golden brown.
6. Add tomatoes and sauté for 2 minutes on medium heat.
7. Add mutton and burn on high heat for 2-3 minutes.
8. Include turmeric powder, agri koli masala and mix well.
9. Include potatoes and mix well. Include 1 cup water and mix well.
10. Add the ground paste, 1 1/2 cups water and blend well. Cover and cook on medium heat for 25-30 minutes.
11. Add coriander leaves, lemon juice and mix well.
12. Transfer in a serving bowl, garnish with coriander sprig and serve hot with bhakri.
