Experience a wholesome twist on a traditional preferred and delight in 'Peas Kaju Samosa', lovingly made in the air fryer.
These golden pockets are filled with a scrumptious mixture of green peas and cashews, providing a best balance of flavours. They are prepared in the air fryer, making them a much healthier alternative to traditional fried samosas while still providing a rewarding and tasty bite.
PEAS KAJU SAMOSA.
Active ingredients.
Dough.
1 cup refined flour.
1/2 tsp carom seeds (ajwain).
1 tsp salt.
3 tbsps melted ghee.
60 ml water.
Stuffing.
3 medium potatoes, boiled, peeled and mashed.
1 tablespoon coriander seeds.
1 tablespoon fennel seeds.
1/2 tablespoon cumin seeds.
2 tablespoons oil.
1 tbsp sliced ginger.
2 green chillies, sliced.
1/4 tsp asafoetida (hing).
15-16 roasted cashew nuts, sliced.
1 1/2 tsps dried mango powder (amchur).
1/2 tsp red chilli powder.
1 1/2 tsps salt.
1/2 cup blanched and crushed green peas.
Oil for spraying.
Green chutney for serving.
Date and tamarind chutney for serving.
Approach.
1. To make the dough, take refined flour in a bowl.
2. Add carom seeds, salt, ghee and 4 tablespoons water and knead to stiff dough. Cover with a damp muslin cloth and reserve for 10-15 minutes.
3. Heat a pan. Add coriander seeds, fennel seeds and cumin seeds and dry roast till fragrant. Transfer in a mortar and crush coarsely with the aid of a pestle.
4. Heat oil in a pan. Add ginger, green chillies, crushed spices and asafoetida and sauté for 30 seconds.
5. Add cashew nuts, dried mango powder, red chilli powder and salt and mix well.
6. Add green peas, boiled potatoes and mix well. Prepare for 2-3 minutes or till the stuffing is thoroughly heated.
7. Transfer in a bowl and permit to cool.
8. Divide the dough into 5 equivalent parts and roll into thick oval shapes.
9. Cut into half, use water on edges and shape into a cone.
10. Things the potato stuffing and seal the edges.
11. Preheat the air fryer at 180 ° C for 2-3 minutes.
12. Spray oil on air fryer basket and set up the prepared samosas.
13. Spray some oil and air fry for 40-45 minutes.
