  4. great job this week guys,its nice to see u choosing lamb,a protein which in my eyes is way under utilized,especially given the rising cost of beef lately in the stores,due to the prolonged droughts in the West

  5. Aussies love their lamb – cooked the way you do it, or slow cooked till it falls off the bone – it’s all great. Where you made slits and added garlic, I also like to add little sprigs of rosemary and anchovies. The anchovies will melt away and leave you with amazing flavour that doesn’t taste anything like anchovies were ever there.

    2. Hell no, if anything probably take it out 3-4 mins sooner. He did specify that to you guys though anyway because some fools like it to charcoal.

  6. Perfect !!! This is very close to the traditional Greek recipe. The only difference is that rosemary is also added. The leg of lamb is rubbed with butter and wrapped several times with greaseproof paper roll before cooked, at the same temperature. It cooks slowly for a number of hours that correspond to its weight, e.g. 5 hours for 5 kilos of meat. BBQ Pit Boys rule !!!

  9. Lamb comes very close to beef as one of my fave meats to roast/smoke, it’s such a tasty but of meat. I loved the leg but have just started to really like cooking shouder. So, so tasty. Great video guys (as ever) !

The resting period afterwards is something I’ve not seen other BBQ channels do. Well, maybe because you cooked the lamb kinda rare but it’s a great technique. Thanks again.

    1. No worries mate. That Argentinian charcoal from Argie Grillz is so dense it feels like a rock in weight. I havnt used it yet as I got my first bag today but i bet i will only need 1/2 as much as usual(compared to the others) and a real good flavour. I can’t wait to try it. Ask me in a few days. cheers.

    2. I’m bloody surprised you boys didn’t jump on and say about stabbing the rosemary in with the garlic. These guys are legends, but they can always get a tips from us true lamb legends

    4. @钟秋 agree. Some mint leaves in with the garlic and rosemary goes well too, so does a Moroccan marinade.
