Khekda Bhaji | कुरकुरीत खेकडा भजी | कांदा भजी | Onion Pakoda | Sanjeev Kapoor Khazana

Do not be surprised by the name, these Khelda Bhaji are vegetarian! Made by frying onions tossed in a tasty mix. Make these crispy fritters today!

KHEKDA BHAJI

Components

3-4 medium onions
Salt to taste
1 tsp red chilli powder
1/2 tsp turmeric powder
2 green chillies, sliced
1 cup gram flour (besan).
1/4 cup rice flour.
Oil for deep frying.
Green chutney to serve.

Technique.

1. Thinly slice the onions and move into a big bowl. Include salt and blend well. Reserve for 10-15 minutes. Add red chilli powder, turmeric powder, green chillies and blend well. Include gram flour, rice flour and mix till well integrated.
2. Heat adequate oil in a kadai. Add little parts of the mix into the hot oil and deep fry till golden brown and crisp. Drain pipes on an absorbent paper.
3. Serve hot with green chutney.
