  1. why doesn’t he de-glaze the pan he seared the short ribs in and then put it in to the braising pan

    1. @Youtubeaddict And yet virtually every other kitchen Guy has visited will deglaze the pan. It’s common practice, and really does make a difference. I’m sure this dish was good, but he still missed an opportunity to add a little more flavor.

    2. In theory you would use the fond from the seared protein if you were building a sauce in the pan but if you’re braising something you don’t really need to do that since you’re going to reconstitute the braising liquid into a sauce

    3. @Youtubeaddict It really can. Bits of concentrated flavor, a tasty Liquid to deglaze with adds a ton of flavor

  3. I’m amazed we didn’t get any footage of homeless people shitting in the street, or needles, or car break ins. Seeing as how SF is now the car break in capital of the US 😂

  4. How does my guy not toss a little of that stock/Dr. Pep into his searing pan to deglaze the fond? Come on! That’s delicious flavour you’re leaving out!

  5. I almost thought he was going to dog the Dr. Pepper reduction since that was mentioned last, but it instead was best for last. Guy’s full of surprises, but wow that looks amazing! Save me a plate please, I’m on my way!

  7. I once had fresh raw oyster shooters with cocktail sauce and fresh grated horseradish root. They were really good.
