Good for you! Nothing wrong with it. But all this you have done for yourself. On your deathbed, you will not remember your case study or your awards and accolades, but you will remember what you did for others.
The very first line of food are the grocers. How about you teach good hygiene and maybe give free trash cans to each vegetable seller that they can keep their surroundings clean. Nothing wrong with eating and creativity, but how much should a person eat in his lifetime… same foods in thousand different ways or many different foods. You could definitely do more than that! 🙏
I do not say it lightly the respect you have brought to the culinary world and how many young chefs are learning under your wings and it would be such a privilege for them.
But when I think of kitchen, I think of a clean and sacred space and I believe it starts from where we buy our food. I wish you would change that landscape that food is treated with respect from start. May be making Mumbai one of the cleanest cities would be a start… not buying US apples, our own local food should be clean and best.
