2. Cut sinew and excess fat from brisket flat and season greatly with Killer Hogs TX Rub.
3. Place brisket flat on pit and cook until the outer surface area establishes a mahogany/dark color.
4. Cube the brisket into bite size parts and location in a big aluminum pan. To the pan include sliced onion, garlic, sliced mushrooms, tomato paste, thyme, beef consume, Guiness beer, and Worcestershire sauce. Cover the pan with foil and location back on pit.
5. Check the brisket bites after 2 hours for softness. When you can squeeze them and they almost fall apart, they're done.
6. Remove the pan from the pit and carefully different the brisket portions from the drippings in the pan. Discard any pieces of thyme stems at this point.
7. Integrate the brisket drippings with the brown gravy (just mix a brown gravy package with water and heat till it begins to thicken). Pour this gravy mix over the brisket chunks and gently fold so everything is covered.
8. Spoon the brisket chunks into a large cast iron frying pan and top with mashed potatoes.
9. Include the parmesan and shredded cheddar to the top, garnish with a little sliced parsley, and location back on the pit. At this moment I crank the heat up to 350 ° F.

  3. From the UK – This looks amazing! will have to give this a go!

we call lamb based pies like this shepherds pie (shepherd//sheep) and the beef version a cottage pie!

    1. Not just the UK, pretty much every country would call this a cottage and not a shepherds pie.

  4. love it.. did this months ago I’ve learned tons from you in the past 5 years… only thing missing is the corn for that lil extra pop.. maybe even stuff them letf overs in a stuffed pepper.. have a good weekend Malcom

  9. You had me at brisket but that looks awesome, I now know what I am making for St Patrick’s day. Thanks

  10. That looks soooo good! But actually you made a “Cumberland pie” because you used chunks of meat. A Shepard’s pie uses ground lamb (hence the name) and a Cottage pie uses ground beef. Both usually also have either carrots or peas or both in them as well. But no matter what you call it….. I call it Good!

    1. Not quite, Cumberland pie is usually the same as a Cottage pit but has the addition of Cheese in and on top of the mashed potato topping. The chunk vs minced beef option is viable across all three variations, the cheese however is strictly speaking unique to the Cumberland version.

    2. @Zach Ryan Actually I didn’t even know that. I looked up the Darren e between a Shepard’s and Cottage pie because often both names are used and I came across the Cumberland. These were a some British food sites.

    3. @Ayatollah_of_Rock_n_Rolla Ah ha! Great info, which means he really did make a Cumberland pie because he put cheese on it!

    4. @Zach Ryan EXACTLY what I was thinking! Just make the damn pie and eat it! He can call it a moon pie for all I care! It looks amazing!

  11. Great job Malcom, that’s a good looking Shepard’s Pie you made there. Thanks for sharing with us, Fred.

  12. I really wish you would make a book of your recipes. Amazing tips and tricks that I can follow. Love your videos

  13. A great looking recipe, only things I would do differently is use some pearl onions in sted of the chopped and mix some diced canned carrots and frozen peas with the brisket and gravy filling before topping with the potatoes. then it it with a light dusting of chipotle seasoning over the cheese for a touch of color.

  14. “If you wanna drink a little for yourself thats alright” I love this man
