Components for the Chicken Fried Rice with Veggies:
( Tsp- Teaspoon; Tablespoon- Tablespoon )
– Boneless Chicken – 200 gms. (cut into small bite sized pieces).
– Cooked Rice (day old, kept in the fridge) – 3 United States cups (made from 200 gms of raw white rice ).
– Eggs-3.
Stir-fry Sauce:.
– Oyster Sauce-2 tablespoon.
– Light Soy Sauce-1 tsp or 2 tsp ??- maybe 2 tsp.
– Dark Soy Sauce- 1 tsp.
– White Pepper powder-1/ 4 tsp.
– Sugar-1 tsp.
Boneless chicken marinated with:.
– Salt-pinch or 1/4 tsp.
– Stir-fry sauce mix- 2 tsp.
– Corn flour/starch- 1 tsp.
– Baking soda-pinch.
– Oil- 1 tsp.
Tempering:.
– Garlic peeled and great sliced- 2 tsp (10 gms).
– Salt-pinch.
– White pepper powder-pinch.
Veggies:.
– White onion, sliced- 1 little (around 40-50 gms).
– Carrots, little cubed – 1/2 cup (around 50 gms).
– Frozen or fresh green peas- 1/2 cup (around 50 gms).
Other Components:.
– Oil- 2 tablespoon.
– Salt to season-pinch.
– White pepper to season-pinch.
– Spring onion greens, chopped -3 tbsp.
Preparation:.
– Prepare 200 gms white rice the night in the past, a little undercooked and spread in a plate in the fridge. Must be cold when you make the Fried Rice.
– Add all the items of the Stir Fry Sauce in a bowl and whisk it to combine. (You can include 1 tablespoon water if needed. ).
– Take boneless chicken pieces and cut them into small cubes.
– Marinade this with the items specified previously. Reserve for around 30 mins.
– Chop the carrots and 1 small white onion. Likewise peel fresh green peas or use frozen ones.
– Slice the spring onion greens.
Process:.
– Heat 1 tablespoon oil in a wok and add the whisked eggs.
– Scramble it gently for a minute and after that include a tbsp of sliced spring onion greens. Mix and scramble gently and get rid of on a plate.
– Clean the wok clean and then include 2 tbsp of oil.
– Include 2 tbsp oil and include the chopped garlic. Provide a stir for 30 secs and after that add the marinaded chicken pieces.
– Mix and stir fry on high heat for a minute and after that add the sliced white onion, carrots and green peas. Season with pepper powder and salt and stir fry for a minute.
– Add the cooked rice, pepper powder, salt and the mixed sauce.
– Mix and stir fry on high to medium heat for around 2 mins till whatever is integrated.
– Add back the rushed eggs and the sliced spring onion greens.
– Stir fry for a minute and serve hot.
