Lovely and easy. Looks so good for a cold winter day in California. Very nice. I bet masala dosa filling is not very different.
I wonder how this will taste with purple yam which has more fiber and is an interesting vegetable. I’m going to try it with something not so starchy as white potatoes and lower glycemic index.

Purple Yam GI 54.
Both are very high in potassium around 440 -650 mg. Potatoes are higher. But Purple Yams have antioxidants and more fiber.
