HARE LEHSUN AUR BAINGAN KA BHARTA

Components

2 tbsps green garlic bulb, squashed
1/2 cup green garlic stalks sliced + for garnish
2 big brinjals (bharta baingan).
3 tbsps oil + for using.
1 tsp cumin seeds.
2-3 green chillies, sliced.
1 large onion, roughly sliced.
1 large tomato, roughly sliced.
1 tsp red chilli powder.
1/2 tsp turmeric powder.
1 tsp garam masala powder.
Salt to taste.
Bhakri for serving.

Approach.

1. Apply oil on the brinjals and roast the brinjal on open flame, till soft and charred. Enable to cool, peel and approximately mash.
2. Heat oil in a nonstick wok, add cumin seeds and once they change colour, add green garlic bulb and green chillies and sauté for a minute.
3. Include onion and sauté till clear. Include tomato and sauté for 3-4 minutes.
4. Include red chilli powder, turmeric powder, garam masala powder and salt. Cook for 1-2 minutes.
5. Add prepared brinjal and green garlic stalks, mix well and prepare for 1-2 minutes.
6. Transfer in a serving bowl, garnish with green garlic stalks and serve hot with bhakri.
