  1. Was that dish in the beginning supposed to be mapo tofu? Because I lost it when he served that to Gordon Ramsay lol
    The chef that made that dish went to the other side of the spectrum and couldn’t screw up more than that.

    You’re supposed to use Sichuan peppercorn and grind that into powder. That’s where the “ma” comes from, because “ma = numbness.” “Po” is supposed to mean mother-in-law/granny/elder woman in Chinese. Hence, Mapo is referring to the creator of that dish from 1800s. You also need to use ground pork as the foundation and base it with bean paste and other various ingredients. And you definitely don’t want to put rice in the middle of that dish either because by the time you serve it to customers, rice will become mushy and soggy. You need to serve steamed white rice (preferably Jasmine rice) in a separate bowl. This dish is a very complex dish that takes years to master, because you can follow the procedure correctly for every steps, but the taste and flavor will vary depending on your own experience or the chef making it. It’s after hundreds and thousands of trials and errors can you master it. Even just using the heat too high or low can affect the flavor of the dish. Or if your ground pork isn’t minced enough, it can also affect the flavor of the dish. This dish is meant to be a very famous Sichuan cuisine dish, and it’s supposed to be numb and spicy. But the spiciness isn’t your chemical hot sauce that American eat that’s sour and salty. It’s a natural spiciness that comes from the Sichuan red peppers grown locally from Sichuan. Hence, the signature flavor of Sichuan cuisine is “ma = numb” and “la = spicy.”

    The issue I saw was that the chef had no respect or love for his food, let alone people eating them. A master chef is only a master chef if he appreciates and respect his ingredients and love the things he’s creating.

  3. I really respect the fact, the son was very impressed by his dad blowing up in him and gave him the respect ye deserves. You don’t hardly see that on these shows.

  4. That chef should have been fired years ago, I don’t think that Gordon fully grasped how he was acting and cooking. He really did not care and he knew he could walk all over the owner.

  5. This owner was one of the only one that I was on his side the whole time. He was not egotistic, not in denial, accepts all the criticisms and opened to change. He needs to be saved!

    1. yeah it felt kinda brutal for RAmsay in the opening scenes to go after him when he knew the guy was accepting all the criticisms and harsh truths.

I dunno, I think he went overboard with that chef in the end. “Go faster!” isn’t constructive, and if the chef is doing the best they can without making mistakes, what are you going to demand he do? Also, I lose a lot of respect for an employer when they respond to ‘Give me the money you owe me’ with “That’s all you care about! I’m not paying you a cent!” Like it’s a job, employees are literally there to do work in exchange for money.

      He did recover in the end though, I’m glad to see.

  7. “Both of us are pregnant.” Lmao. What response did they expect from telling the owner that? “Oh, my bad, some dude splooged in you? I’ll bring you your food right away!” As if other customers hadn’t been waiting even longer for their food.

  8. This is one of the episodes where most people were great (except Aurelio) and they actually listened and appreciated Gordon

  9. How could he not know Gordon was going to look in the refrigerator? Has he never watched a show?

  10. So wonderful to see that guy love his Dad so much that he wasn’t even disturbed with his Dad yelling at him, recognised that it was apart of his Dad’s growth as a manager, and got so excited by it happening!

  11. I’m so impressed by how loving, respectful, and supportive the son is.
