Ingredients for Chilli Fish Dish:
– Boneless fish fillets – 300-350 gms (Basa, Cod, Haddock, Sole or Catfish).
For Marination:.
– Salt-1/ 2 tsp.
– White pepper powder- 1/2 tsp.
– Soy sauce – 1/2 tsp (usage light soy sauce).
– Egg white-1.
– Great sliced garlic-1 tsp.
– All purpose flour- 1.5 tablespoon.
– Corn flour- 2 tbsp.
Tempering:.
– Garlic, great chopped- 2 tsp.
– Ginger, fine chopped- 1 tsp.
– Green chillies sliced- 4.
– Spring onion whites- 1 tablespoon.
Sauces:.
– Oyster Sauce- 1 tablespoon.
– Light Soy Sauce- 1 tablespoon.
– Water- 2 tbsp.
Other Active ingredients:.
– Red pepper, cut into petals- 90-100 gms.
– Green pepper, cut into petals-90-100 gms.
– Oil- 3 tablespoon.
– pepper for seasoning-pinch.
– Corn slurry- 1 tsp corn flour/starch blended with 4 tablespoon water.
– Oil for deep frying.
– Oil – 2 tbsp.
– Spring onion greens- 2 tablespoon.
Preparation:.
– Cut the fish fillets into thin flattish pieces. Marinate the pieces for around 30 mins.
– Next deep fry the pieces for around 3-4 minutes till golden brown. Remove and repeat for the rest.
– Prepare the corn slurry and reserved. Keep in mind to mix it one more time just before adding to the meal.
Process:.
– Heat oil in a wok/pan and include the great sliced ginger and garlic. Offer a stir for 15 secs.
– Add the spring onion whites and sliced up green chillies and stir fry for a minute on high heat.
– Now include the peppers, pinch of black pepper and stir fry for around 2 minutes on medium heat.
– Add the sauces, mix and include the corn slurry. Add 2 tbsp water.
– Prepare it on medium heat for a minute and then include the fried fish pieces.
– Mix and stir fry on high heat for 1-2 minutes till it coats the fish pieces.
– Garnish with spring greens and mix well. Serve hot.
