Chettinad Fish Fry | चेट्टिनाड फिश फ़्राय | Fish Fry | South Indian Recipe | Sanjeev Kapoor Khazana

Tasty and delicious chettinad masala marinaded fish fry. A yummy accompaniment for sure!

Components

2 large king fish (surmai) darnes
1 tsp black peppercorns
2 tsps cumin seeds
2 tsps fennel seeds
1/4 cup coriander seeds
10-12 pandi dried red chillies, stemmed
1/2 tsp asafoetida (hing).
1/2 tsp turmeric powder.
Salt to taste.
1/2 cup shallots.
10-12 garlic cloves.
Coconut oil for shallow frying.
2 green chillies, slit.
10-15 curry leaves.
1 lemon.

Approach.

1. Heat a nonstick pan. Dry roast black peppercorns, cumin seeds, fennel seeds, coriander seeds, dried red chillies till fragrant.
2. Add asafoetida, turmeric powder, salt and mix well. Take the pan off the heat and permit to cool.
3. Transfer shallots in a mixer jar. Add garlic, roasted spices and grind to a fine paste.
4. Transfer the fish darnes in a plate and use the ready paste over them.
5. Heat coconut oil on a nonstick tawa. Place the fish pieces, position some green chillies and curry leaves on the side and shallow fry for 4-5 minutes on medium heat. Flip and cook on other side for 4-5 minutes.
6. Transfer on serving plate, capture lemon and serve hot.
