Components for Chicken Malai Kofta Curry:

( Tsp-Teaspoon; Tbsp-Tablespoon).

Chicken Mince/Keema- 250 gms.

For Meatballs/ Kofta Mix:.

– Breadcrumbs- 6-7 tablespoon.
– Squashed pepper/Pepper powder- 1/2 tsp.
– Red Chilli flakes-1 tsp.
– Salt- 3/4 tsp.
– Onion, great sliced- 3-4 tbsp.
– Green chillies chopped-3-4.
– Coriander leaves sliced- 3 tbsp.
– Garlic, fine chopped- 2 cloves (1 tsp).
– Egg – 1 little.

Onion-Cashew Paste:.
– Onion, sliced thick – 2 medium (150 gms).
– Cashew nuts- 12 nos.
– Green Chillies, cut- 3.

Entire Spices:.
– Green Cardamom- 5.
– Cloves-5.
– Black Peppercorns- 12.
– Cinnamon- 2 broken into 2 pieces.

Spice Powders:.
– White Pepper Powder- 1/2 tsp.
– Coriander Powder- 1.5 tsp.
– Cumin Powder- 1 tsp.
– Garam Masala Powder- 1 tsp.
– Salt- 3/4 tsp.

Other Ingredients:.
– Ginger Garlic paste- 2 tsp.
– Whisked Curd/Yogurt- 3 tbsp.
– Fresh Cream- 3-4 tbsp.
– Oil- 4-5 tablespoon.
– Kasuri Methi (Dry Fenugreek Leaves), roasted & powdered- 2 tsp.

Preparation:.

– Add the ingredients for the kofta mix. Mix well.
– Now apply oil to your palms and form meatballs/koftas as shown in the video.
– For the Cashew-onion paste, heat oil and include the thick sliced onions. Mix and fry on medium heat for 3 minutes till little soft. Now add the cut green chillies and cashew nuts and fry on low heat for another 2 mins till the onions are soft and modification colour. Eliminate this to a plate and allow it to cool.
– Now transfer this to a mill and coarse grind it. Open the cover and add 4-5 tbsp water. Now mix it into a smooth paste.
– Take a pan, heat 4-5 tbsp oil and drop all the koftas side by side. Stir and fry on medium heat for around 5 minutes till browned. Eliminate the fried koftas to a plate.

Process:.

– In the very same pan include the whole spices and give a stir.
– Now add the ginger garlic paste and fry on low heat for around 2 mins till raw smell is gone.
– Now include the onion-cashew paste made earlier, mix and fry on medium heat for around 5-6 mins till the masala is cooked totally and oil separates.
– Now add all the spice powders including 3/4 tsp garam masala powder, mix and fry on low heat for 2-3 minutes.
– Switch off heat and add blended curd/plain yogurt and fresh cream. Mix well and cook on low heat for 3-4 mins till oil separates.
– Now include 200 ml of water and offer a mix.
– Include the fried koftas, offer a mix and cook covered on low heat for around 5 minutes.
– Lastly add 1/4 tsp garam masala powder and roasted & crushed kasuri methi. Mix and simmer for 2-3 mins.
