Ingredients for Degi Mutton Korma:

( Tsp-Teaspoon; Tbsp-Tablespoon).

– Mutton – 750 gms (curry cut with fat and bones).

Fried onion/ cashew paste:.
– Fried onions- 3 tbsp.
– Cashew nuts- 8.
– Milk- 1/2 United States cup.

Degi Masala-.
– Black cardamom-2.
– Green Cardamom- 4.
– Cinnamon-1 little piece.
– Cloves- 5.
– Cumin seeds-3/ 4 tsp.
– Black peppercorns -1/ 2 tsp (around 15 nos).
– Mace (javitri) -Half flower.
– Nutmeg( Jaiphal)- little piece.
– Dry rose petals -1 tsp.
( Usage 3/4 tsp of this powder for 750 gms).

For cooking mutton:.
– Onions, roughly chopped -2 medium (120-130 gms).
– Turmeric powder- 3/4 tsp.
– Red Chilli Powder-1.5 tsp.
– Coriander powder- 2 tsp.
– Salt-2 tsp.
– Green cardamom-5.
– Cloves-5.
– Cinnamon -1 piece.
– Bay leaf-2.
– Dry increased petals -1 tsp.
– Ginger garlic paste-1.5 tbsp.
– Blended curd/ plain yogurt-120 ml (5-6 tbsp).
– Oil/ Ghee – 5-6 tbsp.
– Water-250 ml.

Other Components:.
– Keora water-1 tsp.
– Green chillies, sliced into two -3 for garnishing.

Preparation:.

– Wash and keep the mutton pieces, ideally pieces with fat and bones.
– Roughly slice 2 medium onions.
– Blend the curd/plain yogurt.

– For the Degi Masala powder, include all the items to a grinder and grind to a powder. Use 3/4 tsp of this powder.
– For the fried onions, slice one big onion (100 gms) and fry in oil till golden brown in colour. Get rid of and enable to cool.
– Now to a grinder add the fried onions, the cashew nuts and 1/2 cup of milk. Blend to a paste.
– Ensure the milk that you use in this recipe is boiled and cooled to room temperature level.

Process:.

– Take a pressure cooker and add all the active ingredients including oil and water.
– Mix well and close pressure cooker.
– Pressure cook for 4 whistles. (On high heat till 1st whistle (around 6-8 minutes), then another 3 whistles on low heat. (An overall of 15-18 minutes).
– In case you're not utilizing a pressure cooker you can likewise utilize a pan or pot or kadhai. It will take around 45 minutes on low heat.).
– Permit the pressure to release by itself and then eliminate the cover.
– Add the fried onion-cashew paste made in the blender. Likewise add 3/4 tsp of the homemade Degi Masala powder and the Kewra water.
– Mix and prepare for around 5 mins on low heat.
– Lastly add the chopped green chillies.
– Mix and cover and simmer for around 2 minutes till oil separates.
– Serve with roti or rice.

    1. Yes you can but not korma. Curd/plain yogurt is an important ingredient for a korma 😃
