Agri Kolambi Rassa | आगरी कोलंबी रस्सा | Prawn Curry | Seafood Recipes | Sanjeev Kapoor Khazana

Agri dishes are known for being hot and spicy! This dish is no different than that, fresh prawns (kolambi) marinaded and prepared in a delightfully flavoured and sluggish prepared gravy (rassa), sets magnificently with steamed rice or bhakris too!

AGRI KOLAMBI RASSA

Components

2 tablespoons agri masala
16-20 medium prawns (kolambi), peeled, cleaned up, and deveined
3/4 cup grated dried coconut
3 tbsps oil
10-12 garlic cloves, coarsely squashed
2 green chillies, coarsely crushed
2 medium potatoes, par-boiled and quartered with the skin on
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala powder
Salt to taste
1 tablespoon lemon juice
2-3 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
To serve
Rice bhakris
Onion wedges
Green chillies

Method

1. Dry roast dried coconut in a kadai till golden. Switch the heat off, allow to cool and move into a blender container. Mix to a great powder.
2. Heat oil in a pan. Add garlic and green chillies and sauté till golden brown.
3. Include potatoes, agri masala, turmeric powder, coriander powder and garam masala power and mix well.
4. Include 2 1/2 cups water and salt and mix, cook till it comes to a boil.
5. Add the prawns and the combined coconut powder and mix well. Prepare on high heat for 5-6 minutes.
6. Include lemon juice and coriander leaves and mix well. Let the mixture boil for 2 minutes.
7. Transfer the mixture into a serving bowl, garnish with coriander sprig and serve hot with rice bhakris ¸ onion wedges and green chillies.
