This is right in agreement with what many other notable chefs say to do. Keep them uncovered, use salt in the water, use high heat, boil them a fairly long time, rinse a while in cold water & refrigerate, and don’t peel them until they’re cool.
Actually any salt or sugar, whether Potassium Chloride or Sodiam Chloride or various sugars eg., glucose, sucrose, fructose etc. The molecules of the solute dispersed interstitially increase the boiling point and lower the freezing point of pure H2O. … but you knew that. 😉
(Save energy, don’t dilute any minerals with water you toss out, and improve flavour. Just toss the raw washed potato in the microwave for a few minutes. Experiment. It works ! )

👋 I found it very interesting that you put up a video that shows a life skill. Nice job. But I will add that adding salt to water actually increases the boiling point of the water molecules. That’s why it took longer for your potatoes to cook. But nice job experimenting in the kitchen!

It actually doesn’t. It slightly raises the boiling point for the water (barely though like 1 C only). Regardless you should salt the water for taste
