Marvellously simple, these mushrooms with a deep golden brown colour and sweet-tart flavours is an easy-peasy recipe. Another great side to your favourite Oriental main dish.
BALSAMIC GLAZED MUSHROOMS
Active ingredients
1/2 cup balsamic vinegar
35-40 button mushrooms
2 tablespoons sugar
2 tablespoons oil
2 tablespoons finely sliced garlic
1 medium onion, carefully sliced
Salt to taste
1 tsp red chilli flakes
1/2 cup frozen blanched edamame, thawed
2 tbsps corn flour slurry
2 tablespoons chopped spring onion greens
Fried rice to serve
Method
1. Caramalise sugar in a shallow pan. Add balsamic vinegar and blend well. Cook for 6-8 minutes or till the mix thickens.
2. Heat oil in another shallow pan. Include garlic and onion and sauté till translucent. Include mushrooms, salt, dried red chilli flakes and mix. Prepare on high heat for 3-4 minutes.
3. Include the decreased balsamic decrease and mix well. Prepare for 1-2 minutes.
4. Add edamame and corn flour slurry and blend well. Cook for 1-2 minutes.
5. Add spring onion greens, mix and serve hot with fried rice.
