The exterior of the potatoes are a caramelized by prolonged low heat and creates that wonderful texture.   4. Hi! Thanks for such brilliant recipes! I use Madras Samayal as a singular point of reference to try out stuff & it always comes out well.
    You always give us the quantity measurements (1 tsp etc) which is very useful.
    I’d really appreciate if you started mentioning the time measurements in your videos too (Eg: For the Potatoes to be half cooked, what’s the approximate time it takes?) and also the gas flame level ( low, med or High). Thanks again’
