Suran as fritters in Maharashtra, and as chutney in Bihar. Yes. Suran ki Chutney is a Bihari dish. Exact same active ingredient, just among the many interesting preparations. Do shot.

SURAN KI CHUTNEY

Components

500 grams yam (suran), peeled and cut into 3 inch pieces
1 tsp turmeric powder
Salt to taste
2 tablespoons yellow mustard seeds
1 tsp carom seeds (ajwain).
2 green chilies, slit.
1 tsp roasted cumin powder.
1 1/2 tsp finely sliced garlic.
1 lemon cut into half.
1/4 cup mustard oil.
1 tsp red chili powder.
Fresh coriander sprig for garnish.

Technique.

1. Put the yam in a pressure cooker, include 2 cups water, 1/2 tsp turmeric powder, salt and mix well, cover and cook under pressure for 3-4 whistles on medium heat.
2. Lightly roast the yellow mustard seeds in a pan for 1 minute. Transfer in a mortar and coarsely crush with the help of a pestle.
3. Open the cooker once the pressure has actually minimized completely, move the cooked yam on a plate and mash the yam with the help of a masher.
4. Add carom seeds, green chillies, roasted cumin powder, garlic, crushed mustard seeds, squeeze the juice of lemon straight into it and blend till well integrated.
5. Heat mustard in a pan. Add remaining turmeric powder, red chilli powder and blend well. Change the heat off and permit the mix to cool a little.
6. Pour the cooled oil over the yam mixture and mix well. Trasnfer this mix in an air tight jar, place it in the refrigerator for 6-7 hours.
7. While serving, take a portion of the chutney, garnish with coriander sprig and serve.
