Sunny's Easy PB&J Swirl Bars

Yield: 8 to 10 portions.

Components.

Crust:.

Nonstick spray, for the pan.
3 sleeves (28 crackers) .
1/3 cup loaded light brown sugar.
3/4 cup (1 1/2 sticks) salted butter, melted.

PB&J Layer:.

1 1/2 cups creamy peanut butter.
1/2 cup light brown sugar.
3 tablespoons saltless butter, melted.
1/2 cup seedless strawberry jam, gently blended to loosen up.

Directions.

Make the crust. Spray an 8-inch square metal baking pan with nonstick cooking spray. Line with parchment paper, allowing the parchment to overhang the edges of the pan. Spray again and set aside.

In a food mill, pulse the crackers, brown sugar and butter till integrated and it looks like damp sand. Remove and press into the bottom of the pan. Cool for an hour.

Pre-heat the oven to 350 degrees F.

Make the PB layer: In a stand mixer or with a hand-held mixer, beat the peanut butter, brown sugar and butter in a bowl up until smooth. Remove the pan from the refrigerator and spread out the peanut butter mix evenly over the bottom layer.

Add the swirl. Drop about 9 dollops of the jam around the pan. Use a skewer or butter knife and drag it through the jam and peanut butter to make swirls.

Bake till set, about thirty minutes. Enable to cool entirely, then eliminate from the pan and cut into bars the size of your choosing.

  4. I wonder how a little bit (1/4 tsp or so) of vanilla extract in the peanut butter mix would work out. In my head, it sounds like it might be nice, but i could be wrong. Any professional chefs out there weigh in?

    Oh, or maybe come chunked up dark chocolate chunks in the PB, to get a reeses type flavor in addition to the jam.

    But i tell you what, i would eat these just as they were made. I love PB&J.
