Spicy Mutton Masala Gravy|South Indian Mutton Masala|Spicy Mutton Gravy Dish|Mutton Curry|Mutton Gravy|Tasty Mutton Curry|Mutton Masala Curry|Mutton Gravy by Spice Consumes
Components for Mutton Gravy:
Mutton, curry cut with bones – 1 kg (Lamb or Goat Meat).
Masala Paste:.
– Red Chilli Powder- 4 tsp.
– Coriander Powder- 6 tsp.
– Cumin Powder- 2 tsp.
– Fennel Powder- 2 tsp.
– Turmeric Powder- 1 tsp.
– Water- 1/2 cup.
Whole Spices:.
– Cinnamon-2.
– Bay Leaf- 2.
Other Ingredients:.
– Small Shallots- 200 gms (peeled and halved, keep entire if small ones).
– Curry Leaves- 15-20.
– Ginger Garlic paste- 3 tsp.
– Tomatoes, sliced- 2 medium (150 gms).
– Salt – 2 tsp and a 1/4 tsp for spices.
– Improved Oil- 5-6 tbsp.
– Coriander Leaves, chopped- 2 tbsp.
Preparation:.
– Soak the shallots in a bowl of water for around 15-20 mins to quickly peel the skin.
– Halve or make thick slices based on the size of the shallots, and leave these whole if the shallots resemble little bulbs.
– To make the masala paste, add all the spice powders in a little bowl and include 1/2 cup water. Provide a mix and reserved.
– Take 2 medium red tomatoes and slice them.
Process:.
– Heat oil in a pressure cooker or pan.
– Include the cinnamon & bay leaves. Give a stir and include the shallots. Fry 1 minutes on medium heat and then include the curry leaves.
– Fry on medium heat for 5 mins till shallots are soft and light brown.
– Now add the ginger garlic paste, blend and fry on low heat for 2 mins.
– Include the sliced up tomatoes, provide a mix and add 1/4 tsp salt. Fry on medium heat for 3-4 mins till tomatoes are soft.
– Now include the Spice Mix made previously, give a mix and cook on medium to low heat for 3-4 minutes till oil separates.
– Add the mutton pieces and fry on high heat for 2-3 mins.
– Continue to fry on medium heat for another 7-8 minutes till oil separates.
– Add 300 ml water, offer a mix and pressure cook for 4 whistles. (On high heat till the 1st whistle and then on low heat for another 3 whistles. Must take a total of around 15-18 minutes).
– Alternatively, in case you're not using a pressure cooker, continue to prepare covered in the exact same pan, for 45-60 minutes till meat is tender. Give a stir couple of times and add water as & when necessary.
– Open the cover of the pressure cooker once the pressure is launched and simmer it for a couple of minutes. Garnish with the chopped coriander leaves, mix and serve.
