Fish Almondine
RECIPE THANKS TO REE DRUMMOND

Components

3/4 cup breadcrumbs
1/3 cup sliced
3 tablespoons salted butter, melted
2 tablespoons sliced parsley
Kosher salt and black pepper
1/3 cup all-purpose flour
Six 6-ounce cod fillets
1/2 cup mayo
Juice of 1 lemon

Directions

Pre-heat the oven to 375 degrees F.

In a little bowl, integrate the and . Drizzle in the melted butter and toss up until well integrated.

Then stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.

Put the flour in a shallow dish and include a pinch each of salt and pepper. Stir to combine.

Dig up both sides of the fish in the flour, shaking off any excess.

Spread out a generous tablespoon of mayonnaise over each piece of fish …

And sprinkle the crumb mix on top, pressing lightly to make certain it sticks.

Bake till the crumbs are golden and the fish is flaky, 16 to 18 minutes. Squeeze the lemon juice on top and serve.

Cook's Note

Variation: Include 1/4 cup grated Parmesan cheese to the crumb mixture.

  4. Hellman’s mayo has a recipe on the jar like this except for the almonds and you use chicken breast instead of fish,
    and it’s yummy also serve it with rice pilaf and broccoli
