Fish Almondine
RECIPE THANKS TO REE DRUMMOND
Level: Easy
Overall: 40 minutes
Active: 15 min
Yield: 6 portions
Components
3/4 cup panko breadcrumbs
1/3 cup sliced almonds
3 tablespoons salted butter, melted
2 tablespoons sliced parsley
Kosher salt and black pepper
1/3 cup all-purpose flour
Six 6-ounce cod fillets
1/2 cup mayo
Juice of 1 lemon
Directions
Pre-heat the oven to 375 degrees F.
In a little bowl, integrate the panko and almonds. Drizzle in the melted butter and toss up until well integrated.
Include the parsley and toss it in …
Then stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
Put the flour in a shallow dish and include a pinch each of salt and pepper. Stir to combine.
Dig up both sides of the fish in the flour, shaking off any excess.
Spread out a generous tablespoon of mayonnaise over each piece of fish …
And sprinkle the crumb mix on top, pressing lightly to make certain it sticks.
Bake till the crumbs are golden and the fish is flaky, 16 to 18 minutes. Squeeze the lemon juice on top and serve.
Cook's Note
Variation: Include 1/4 cup grated Parmesan cheese to the crumb mixture.

Hellman’s mayo has a recipe on the jar like this except for the almonds and you use chicken breast instead of fish,
and it’s yummy also serve it with rice pilaf and broccoli
I just had Luby’s & Wyatt’s Cafeteria w/ my Mom flashbacks 💖. She passed away from colon cancer in 1990 when she was just 37 yrs. old. Precious memories! Thanks for this memory and recipe, Ree! -from a fellow Oklahoman.
