I’ve never cooked a pumpkin whole like that in the US. I usually take a pie pumpkin, cut it in half, scoop out the seeds and stringy bits (save the seeds to roast later), and then bake the pumpkin upside down on a baking sheet in the oven.
I think he did it whole because he has a pizza oven and doesn’t mine the longer cooking time. I also always cut and clean before roasting in the oven. It’s faster, dries it out a bit (that’s good thing) and adds a caramelized flavor.
I’ve made a few Pumpkin pies but Jamie’s looks absolutely delicious. Going to try this.
