Mushroom Soup with Almonds | Family Food Tales | Sanjeev Kapoor Khazana

MUSHROOM SOUP WITH ALMONDS

Active ingredients

300 grams button mushrooms, approximately sliced
15-20 almonds, blanched and peeled
Blanched and slivered almonds for garnish
2 tbsps butter
1 medium onion, chopped
Salt to taste
White pepper powder to taste
1 1/2 cups milk
Toasted sourdough bread slices for serving

Method

1. Heat butter in a deep nonstick pan. Add onions and sauté till translucent.
2. Include mushrooms and sauté for 5-6 minutes.
3. Add salt, white pepper powder and blend well.
4. Include almonds and blend well. Cook for 2-3 minutes. Take the pan off the heat and enable to cool totally.
5. Transfer in a mill container and grind to great paste.
6. Transfer in the very same pan. Include 1/2 cup water, milk and allow to boil. Cook for 2-3 minutes.
7. Transfer in serving bowls, sprinkle some white pepper powder, garnish with almond slivers and serve hot with toasted sourdough bread pieces.
