MOONG DAL PURI
Components
1/2 cup split skinless green gram (dhuli moong dal), soaked
1 1/2 cups entire wheat flour (atta).
1 teaspoon ginger paste.
1 teaspoon red chilli powder.
1/2 teaspoon coriander powder.
1/4 teaspoon cumin powder.
1/4 teaspoon garam masala powder.
Salt to taste.
1 tablespoon oil + for deep frying.
Approach.
1. Drain and coarsely grind the moong dal. You can likewise utilize dhuli urad dal.
2. Heat 2 tablespoons oil in a non stick pan. Include ginger paste and sauté for half a minute on medium heat. Include red chilli powder, coriander powder, cumin powder and garam masala powder and sauté for half a minute.
3. Add salt and ground moong dal and sauté for 3 to 4 minutes. Set aside to cool.
4. Take entire wheat flour in a deep bowl. Add salt, one tablespoon oil and enough water and knead into a soft dough. Cover with a damp fabric and rest the dough for fifteen minutes.
5. Divide both the dough and the packing into eight parts each. Take one portion of dough in your palm, spread it slightly, place a portion of stuffing and collect in the edges and roll into a ball. Present into a puri of 3 inch diameter. Likewise make the remainder of the puris.
6. Heat enough oil in a kadai and deep fry the puris, one by one, till gently browned. Drain pipes on absorbent paper.
7. Serve hot.
