MOONG BEANS.

Ingredients.

1 1/2 cups split skinless green gram (dhuli moong dal), soaked for 2 hours and drained.
250 gms French beans, cut into 1 inch pieces.
1 tablespoon oil.
1 tsp mustard seeds.
1 tsp cumin seeds.
1 medium onion.
1/4 tsp turmeric powder.
Salt to taste.
1/2 inch ginger, cut into small pieces.
2-3 green chillies.
1 tsp lemon juice.
1/2 tsp garam masala powder.
Thin strips of ginger, for garnishing.
Fresh coriander sprig for garnishing.

Method.

1. Heat oil in a non-stick pan, include mustard seeds and cumin seeds and let them splutter.
2. Slice onion and contribute to the pan and sauté till onion turns translucent.
3. Add split green gram and blend well. Cover and cook for 3-5 minutes.
4. Include turmeric powder and salt and mix well. Include 2 tbsps water and mix well. Cover and prepare for 2-3 minutes. Add French beans and mix well. Include ginger pieces. Cover and continue to prepare for a minute.
5. Approximately slice green chillies and add to the pan. Include 2-3 tbsps water. Cover and cook on low heat till the green gram and beans are done.
6. Reveal the pan, add lemon juice and garam masala powder and blend well.
7. Transfer into a serving platter, garnish with ginger strips and fresh coriander sprig and serve hot.
