“Sindhi Meetho Lolo Recipe”
Ingredients:-
* Whole Wheat Flour (Atta): 2 cups
* Sugar: 1 cup (adjust according to desired sweetness)
* Water: Β½ cup (for the syrup)
* Green Cardamom Powder: Β½ tsp
* Oil or Ghee: 3-4 tbsp (for the dough) + extra for roasting
* Salt: A pinch (optional, to enhance the sweetness)
Preparation Steps:-
1. Prepare the Sugar Syrup:
* In a pan, combine the sugar and water.
* Heat until the sugar melts completely. Do not over-boil; the syrup should not be too thick or too thin. If it’s too thin, the Lolo won’t be sweet enough; if it’s too thick, the bread will become very hard.
* Once melted, add the cardamom powder to the syrup (or you can add it directly to the flour).
* Let the syrup cool down to room temperature.
2. Make the Dough:
* In a large mixing bowl, take the whole wheat flour and add 3-4 tbsp of oil or ghee. Mix well until the flour has a crumbly texture.
* Gradually add the cooled sugar syrup to the flour.
* Knead it into a very firm and hard dough. This is crucial for the traditional texture.
* Cover the dough and let it rest for about 15β20 minutes.
3. Rolling the Lolo:
* Divide the dough into large, lemon-sized balls (pedas).
* Flatten a ball with your hands. Since the dough is stiff and contains sugar, it may stick slightly.
* Roll it out into a circle. Keep it thick (about Β½ cm); do not roll it thin like a regular roti.
* The edges might crack slightly while rolling; this is normal and gives it a rustic look.
* Pro Tip: Use a fork to prick holes all over the surface. This ensures even cooking and prevents the Lolo from puffing up like a puri.
4. Roasting:
* Heat a flat griddle or tawa on low to medium flame.
* Place the rolled Lolo on the tawa. Roast slowly to ensure the inside is cooked through.
* Flip it over and apply ghee or oil generously on both sides.
* Continue pressing gently with a spatula and roasting until it turns a deep golden brown with dark spots.
* Remove from heat and let it cool slightly.
Serving Suggestion:
Meetho Lolo can be served warm or at room temperature. It is often enjoyed with chilled yogurt, pickle, or simply on its own as a snack or breakfast item.
