    1. Hi Grace, I know people have replied with quicklime, cal and whatever, but some call it pickling lime. Alton Brown on Good Eats discussed this process in his original run of the show. From what I understand, it helps in a nixtamalization process that loosens the hulls from the corn kernels. I hope this information helps

  2. Cool video, always give props to restaurant people following the passion….I would be AFRAID however to see how much they charge for those tiny little plates of teeny little things…. Only for the rich people
