Hi Grace, I know people have replied with quicklime, cal and whatever, but some call it pickling lime. Alton Brown on Good Eats discussed this process in his original run of the show. From what I understand, it helps in a nixtamalization process that loosens the hulls from the corn kernels. I hope this information helps
