I appreciate that these are fast recipes, but I wouldn’t recommend either focaccia or pizza without giving them a second rise in the fridge overnight. Without that, both will just taste like bread. You can get away with that on pizza since the crust is just an ingredient delivery vehicle in most cases, but on focaccia, the bread is the centerpiece. Give it the love it deserves
So a single, quick rise is not a bad thing, but the flavor that develops after even a single night rising in the fridge is not comparable. And personally, the only reason I choose focaccia over other bread is the crust — gotta get at least a quarter baking sheet for the amount of dough he had. Spread it thin so you get as much crust surface area as possible. I’d also get a bit more browning than he had, though I tend to prefer extra crunchy focaccia. YMMV on that front.
