Gajar Kishmish and Black Olive Salad | #WellnessWednesday | ProV | Sanjeev Kapoor Khazana

Fruity, nutty and veggie salad with a slightly sweet-spicy dressing. All-in-all, a vibrant, melange of tastes and textures.

GAJAR, KISHMISH AND BLACK OLIVE SALAD

Components

4-5 large carrots (gajar), peeled, and heavily grated
1/2 cup raisins (kishmish).
6-8 black olives, deseeded and sliced.
2 tbsps lemon juice.
Squashed black peppercorns to taste.
1 green chilli, carefully sliced.
1 tablespoon honey.
Salt to taste.
1/4 tsp black salt.
6 walnut kernels, squashed.
1 tsp additional virgin olive oil.
6-8 fresh mint leaves.

Technique.

1. Mix together lemon juice, crushed black peppercorns, green chilli, honey, salt, black salt, walnuts, raisins, black olives and additional virgin olive oil in a bowl.
2. Take carrots in another bowl, include the prepared mix and toss till well combined.
3. Transfer in a serving bowl, and serve garnished with mint leaves.
