How to Make Vegan Mushroom Satay | Sanjeev Kapoor Khazana

If there's a line for mushroom fans, I'm absolutely at the extremely front, because for me, nothing hits the spot quite like Mushroom Satay.

Each skewer of this recipe offers a lively mix of textures, colors, and tastes that come together to produce a mini celebration on your plate. We're pretty sure you won't be able to stop yourself from grabbing another skewer and enjoying every mouthful ✨.

MUSHROOM SATAY.

Active ingredients.

8 fresh oyster mushrooms, cut into 2 inch pieces.
8-10 shallots.
8-10 garlic cloves.
1 inch galangal, roughly chopped.
1 inch lemongrass stalk, roughly chopped.
1 tsp coarse red chilli powder.
1/4 cup coconut milk.
2 tsps Thai red curry paste.
1 tsp brown sugar.
1/2 tsp turmeric powder.
1 tsp coriander powder.
Salt to taste.
2-3 tbsps oil.
Chopped spring onion greens to spray.
Peanut sauce for serving.

Method.

1. Take shallots in a grinder container. Add garlic, galangal, lemongrass, coarse red chilli powder and 1 tbsp water and grind coarsely.
2. Include coconut milk, Thai red curry paste and brown sugar and grind to fine paste.
3. Take mushrooms in a bowl. Add ground paste, turmeric powder, coriander powder and salt and mix well.
4. Thread mushroom pieces on wood skewers and reserved.
5. Heat oil in a nonstick grill pan. Arrange the skewers and cook on medium heat for 3-4 minutes.
6. Flip and cook for 3-4 minutes more on opposite too.
7. Transfer on a serving plate, sprinkle spring onion greens and serve hot with peanut sauce.
