सांजोरी | Sanjori | Sanjeev Kapoor Khazana

Sanjori, a soft parantha with sweetened semolina stuffing is a scrumptious and unique sweet made in a Maharashtrian household.

SANJORI

Ingredients

Stuffing
1 cup semolina (rawa).
2 tbsps ghee + for drizzling.
1 cup sugar.
A pinch of salt.
1/2 tsp green cardamom powder.
Dough.
1 1/2 cups refined flour (maida) + for cleaning.
A pinch of salt.
1 tablespoon oil.

Technique.

1. To make the stuffing, heat ghee in a non-stick pan. Include semolina and roast till golden brown.
2. Stir in 2 cups water and mix well. Cover and prepare for 3-4 minutes.
3. Add sugar, salt and green cardamom powder and blend well. till the sugar melts and the mix thickens.
4. Change the heat off and transfer the mix into a big bowl and enable to cool entirely.
5. To make the dough, take fine-tuned flour in a parat. Add salt, oil and 1 cup water and knead to a soft dough. Cover with a moist muslin cloth and reserve for 15-20 minutes.
6. Divide the stuffing into equal parts and shape each part into a ball.
7. Take a part of the dough and shape it into a ball. Dust the worktop with some flour, place the dough ball and roll it into a little disc. Things it with a ball of the stuffing. Bring the edges to the centre and press to seal.
8. Dust the worktop with some refined flour, put the stuffed dough and roll it into a disc.
9. Heat a non-stick tawa, put the disc on it and for 1-2 minutes. Flip, use some ghee and the other side for 1-2 minutes too.
10. Serve warm.

  2. Hamare yaha sanjori ka mohan banta hai jisme suji ghee me fry kar lete hai badhiya aur usme bad me pisi Hui chini add kar usko ache se mix kar lete hai ..
    Bad me ata Gund k rakhte hai maida ka same
    Bad me choti choti loiya todke ate ki usme feeling bharte hai
    Aur halka sa roll k small size me usko deep fry karte hai dheemi aach par ..
    Isko kehte hai hamari taraf ki sanjori

    Here in North Of India … we are enjoying regular wheat flour paranthas with Halwas n many a times we r even making stuffed halwa paranthas😋 .. This is v different recepie from that .. but .. equally pleasing n delightful… Too Gud 👌👍🙂⚘⚘
