A special Maharashtrian recipe, Methamba is a sweet and hot raw mango relish. It is a should have especially when mangoes remain in season.
Components
3-4 medium raw mangoes
2 tbsps oil
1 tsp mustard seeds
1/4 tsp asafoetida (hing).
1/4 tsp fenugreek seeds (methi dana).
1/2 tsp turmeric powder.
1 tsp red chilli powder.
Salt to taste.
3/4 cup chopped jaggery.
Method.
1. Peel the raw mangoes and cut the top. Cut into wedges and discard the seed. Cut the wedges into 1 inch pieces.
2. Heat oil in a pan. Add mustard seeds and let them splutter. Include asafoetida and fenugreek seeds and blend well. Cook for 30 seconds.
3. Add the raw mango pieces and blend well. Include turmeric powder, red chilli powder and salt and blend well. Cover and cook on medium heat for 10-15 minutes or till soft and pulpy.
4. Add jaggery and blend well. Prepare for 2-3 minutes. Switch the heat off and permit to cool totally.
5. Transfer into a container or a serving bowl. Work as required.
