Best not go to Japan. The amount of things being done wrong cooking tipanyaki is staggering based on your assumptions. Even those two spatula are made specifically to cook on a skillet. Their sole function is to be used as demonstrated in this video. Seasoning the skillet is absolutely normal. I think you need to get out of that food desert rock you’re stuck under.
