I never seasoned smoked sausage, thats about to change.
I actually remove the casing entirely before seasoning it. I do the same thing with my hot links before throwing them on the grill. Gives them some great flavor from absorbing the smoke as well as getting rid of that “pop” when bitting into them.
Why would you want to get rid of the pop?? Thatโs one of the best parts!!
