  1. Guys, would you give us a tutorial on multiple grilling techniques and when to use which? I’m talking about these: over direct heat, opposite to direct heat, low and slow, wrapping in foil, lid up, lid down, etc.

  7. Couple questions if you could pls help me – going to give this a go on Sunday. Did the one in the ceramic grill come out softer because of the beer or would it just have been a different temperature? Also, can you wrap these after cooking and stuff in an esky to keep warm, or would that wreck the crackling? Love your work.

  13. I did this earlier this summer and it came out awesome. Total cooking time was 5 hours. Had to add more coals after the first 2 hours. The slits in the fat for the crackling is key.

And i am here to tell you their recipe is the real thing. Extremely flavorful, tender (i used beer), it was a major hit. If you’re looking for a good bbq pork belly recipe, this is all you need
