    This is a breadless smoked Cuban sándwich.

    I did this with a pork loin, not a tenderloin. It was incredible. I didn’t use BBQ spices but Cuban spices, onion, garlic and line juice. Mustard, ham and swiss is a must. The bacon to lock in the flavors and and juices is heaven. Thank you for giving me a way to join the 2 halves of my family.

  7. Just made two of these and currently resting.

    For those asking for time and temps, my Weber kettle fluctuated between 325-375F (of course, you have to manage the temps) and both loins were done in about 90 minutes. Bacon was crisped and tight and internals were about 150F when I pulled them to rest.
