Yesur Masala | येसूर मसाला | Maharashtrian Recipe | Sanjeev Kapoor Khazana

Marathwada unique, Yesur Masala is a simple homemade spicy masala which can easily substitute chilli powder and garam masala in any veg or non-veg dishes.



7-8 cloves
10-12 black peppercorns
3 bay leaves
1 inch cinnamon stick
1 tbsp cumin seeds
2 tbsps coriander seeds
2 tablespoons brief grain rice
1 tbsp split green gram with skin (chilkewali moong dal).
1/4 cup Bengal gram (chana dal).
3/4 cup pearl millet (bajra).


1. Dry roast cloves, black peppercorns, bay leaves and cinnamon stick till aromatic in an iron pan. Transfer in a bowl and enable to cool.
2. Similarly, dry roast cumin seeds and coriander seeds for 1-2 minutes in the exact same pan. Transfer in the same pan and permit to cool.
3. Include rice, divided green gram, Bengal gram in the exact same pan and roast till golden brown. Transfer into the exact same bowl and enable to cool.
4. Similarly, dry roast the pearl millet for 3-4 minutes in the very same pan. Transfer into the exact same bowl and allow to cool totally.
5. Transfer the roasted mixture into a mill container and grind to a fine powder. Sort it through a strainer into a large bowl.
6. Permit the masala to cool entirely. When cooled, shop in an air tight container and usage as required.
