Both these recipes are outstanding options for those seeking well balanced and nutritious breakfast choices.
VARICHA DOSA
Ingredients
1 cup barnyard millet (vari/ samo), soaked for 4-5 hours and drained
1 cup yogurt
2 tablespoons sago (sabudana), soaked for 4-5 hours and drained
Rock salt (sendha namak) to taste
Ghee for drizzling
Coconut chutney to serve
Approach
1. Put soaked vari in a mixer container. Include yogurt, sabudana and rock salt and grind to a smooth mixture.
2. Heat a non-stick tawa.
3. Pour a ladleful of the batter and spread it in a circular motion to make a thin disc. Drizzle ghee and cook for 1-2 minutes. Fold in half and serve hot with coconut chutney.
JOWAR CHEELA
Active ingredients
1 1/2 sorghum (jowar) flour
2 tablespoons entire wheat flour (gehun ka atta).
2-3 tbsps gram flour (besan).
1 tsp coriander powder.
1/2 tsp cumin powder.
1/2 tsp red chilli powder.
1/4 tsp turmeric powder.
Salt to taste.
A pinch of baking soda.
1 medium onion, chopped.
1 little tomato, chopped.
2 tbsps chopped fresh coriander leaves.
1 green chilli, sliced.
1/2 tsp sugar.
Oil for drizzling.
Tomato catsup to serve.
Approach.
1. Take sorghum flour in a big bowl. Add whole wheat flour, gram flour, coriander powder, cumin powder, red chilli powder, turmeric powder, salt, baking soda, onion, tomato, coriander leaves, green chilli and sugar and blend well. Include 2 cups water and mix till a smooth batter is formed.
2. Heat a non-stick shallow pan. Pour a part of the batter and spread in clockwise direction to make a disc. Drizzle oil on the sides, cover and cook on medium heat for 3-4 minutes. Flip and continue to cook for 3-4 minutes too.
3. Serve hot with tomato ketchup.
