Not sorry, but that”Cuban” at The Paper Bag? Not really a Traditional made Cuban Sandwich. You NEVER put mayo on a Cuban! The rest isn’t terrible — house made dill pickles, house-made mustard, etc. — but in general, making a Traditional Cuban should never go beyond these ingredients: Roasted Pork, Sliced Ham & Genoa Salami, Swiss Cheese, Sour Dill Pickles, Yellow Mustard and Cuban Bread. THAT IS ALL.
As a Cuban raised in Miami, there is no such thing as a “traditional” Cuban Sandwich. Tampa, Miami, and Key West locals all claim to be the first to make the sandwich. Each locale has big variations in their recipes. All that matters is making a damn good sandwich. The best Cuban sandwich I’ve ever had was made by Dominicans on Italian bread in New York City. That’s world peace baby.
