Active Ingredients for Telangana Design Mutton Masala:
( Tsp- Teaspoon; Tbsp- Tablespoon )
Mutton – 1 kg (curry cut with bones).
For Marination:.
– Salt-2 tsp.
– Turmeric powder- 1 tsp.
– Red Chilli Powder- 4 tsp.
– Whisked curd/yogurt- 8 tbsp (250ml).
Masala paste:.
– Fennel seeds (saunf)- 4 tsp.
– Green cardamom-6.
– Cinnamon- 2 little piece.
– Black peppercorns-1/ 2 tsp (around 20-25).
– Black cardamom-3 small.
– Onions, sliced- 3 medium (250 gms).
– Tomatoes, sliced-3 medium (250 gms).
– Salt-1/ 2 tsp.
– Soaked & peeled almonds- 20.
– Oil-4-5 tbsp.
Spice Powders:.
– Red Chilli Powder-1 tsp.
– Kashmiri Chilli Powder-4 tsp.
– Coriander powder- 3 tsp.
– Cumin powder- 1.5 tsp.
Other Components:.
– Oil- 4-5 tbsp.
– Ginger Garlic paste- 4 tsp.
Preparation:.
– Marinate the mutton pieces with the products pointed out. Reserve for 30 minutes.
– Slice the onions & tomatoes.
– For the masala paste, heat 2 tablespoon oil and add all the entire spices.
– Give a stir and then include the chopped onions.
– Fry on medium heat for around 5 minutes till soft and then include the sliced up tomatoes. Likewise include 1/4 tsp salt.
– Mix and fry on medium heat for 3-4 mins till soft.
– Now add the peeled almonds and mix in for a minute.
– Turn off heat and eliminate it to a plate to cool.
– Now mix it to a smooth paste.
Process:.
– Heat oil in a cooker and after that add ginger garlic paste. Provide a mix & fry on low heat for 2 mins.
– Now include the marinaded mutton pieces and burn on high heat for 2 mins. Now include the spice powders, mix and continue to sear on medium heat for another 5 mins till the meat is fried and oil separates.
– Add the masala paste and prepare on medium heat for around 10 minutes.
– Reduce heat to minimum and continue to prepare on low heat for another 5 mins till oil separates, colour of the gravy modifications and ends up being little granular.
– Now include 400 ml water, give a mix and pressure cook for 4 whistles.
– Serve with roti or rice.
