Don't be deceived by the name. It does not have pav or bread in it. These are thick, soft pancakes served with coconut chutney. Think, this is the everyday bread.

TANDUL PAV

Components

1 cup rice flour
1 tbsp crushed green chillies
Salt to taste
2 tbsps sliced fresh coriander leaves
1/2 cup sour buttermilk
1 tsp fruit salt
Oil for sprinkling

Technique

1. Take rice flour in a large bowl. Add green chillies, salt, coriander leaves, buttermilk and whisk well. Add 1 1/2 cups water and whisk till a smooth batter is formed. Add fruit salt and blend well.
2. Heat a non-stick shallow pan. Put a ladleful of the batter and spread it lightly into a disc. Drizzle oil on the sides, cover and cook on medium heat for 2-3 minutes. Flip the disc and prepare the opposite for 1-2 minutes.
3. Serve hot with coconut chutney.
