SOYA BURGER

Ingredients

1 cup soya granules, soaked in warm water
4 brown bread buns
5 tbsps olive oil
2 medium onions, chopped
2 medium onions, cut into round pieces
Salt to taste
2 green chillies, sliced
1 1/2 tsp red chilli powder
1 tablespoon whole wheat flour (atta).
2 medium potatoes, boiled, peeled and mashed.
1/4 cup brown breadcrumbs.
3 tablespoons improved flour (maida).
4 tsps tomato catsup.
4 tsps mustard paste.
A couple of iceberg lettuce leaves.
2 medium tomatoes, cut into round slices.
Crushed black peppercorns, as needed.

Method.

1. Heat 2 tablespoons olive oil in a non-stick pan and 1 tablespoon oil in another non-stick pan.
2. Include sliced onions to the very first pan and saute till lightly coloured.
3. Include onion slices to the other pan and saute. Spray a little salt on the onion slices.
4. Add soya granules to the very first pan and saute. Add green chillies and 1/2 tsp red chilli powder and mix. Include salt and entire wheat flour and mix. Saute for 2-3 minutes.
5. When the onion pieces caramelize, move them into a bowl.
6. Put soya mixture into a huge bowl. Add mashed potato, brown breadcrumbs and blend well.
7. Heat 1 tablespoon olive oil in another non-stick pan. Cut in half the brown bread buns and barbecue them in this pan.
8. Divide soya mixture into 4 equivalent parts and form them into tikkis to match the diameter of the buns.
9. Spread fine-tuned flour in a plate, include 1 tsp red chilli powder and salt and mix well.
10. Get rid of the buns from the pan and set aside.
11. Roll the soya tikkis in the spiced flour. Heat 1 tablespoon olive oil in a non-stick pan, place the tikkis in the pan and cook, turning sides, till both sides are equally golden and crisp.
12. Apply some tomato ketchup and mustard paste on the lower halves of the buns. Tear a couple of iceberg lettuce leaves and place over the lower halves. Sprinkle salt and crushed peppercorns and put the halves on a serving plate.
13. Place a soya tikki on each, top with caramelized onions, cover the leading half of the buns and serve instantly.
