Active Ingredients for Hot Garlic Fish Dish
( Tsp-Teaspoon; Tbsp-Tablespoon).
– Boneless fish fillets – 300 gms (Basa, Cod, Haddock, Sole).
For Marination & Finishing:.
– Pepper Powder – 1/2 tsp.
– Salt- 1/2 tsp.
– All function flour (Maida) – 1 tablespoon.
– Corn Flour- 2 tablespoon (corn starch).
– Egg white- from 1 huge egg.
Sauce mix:.
– Red Chilli Sauce- 2 tbsp.
– Tomato Catsup- 2 tablespoon.
– Soy Sauce-1.5 tsp.
– Brown Sugar-2 tsp.
– Corn starch/flour- 3/4 tablespoon.
– Water- 6-7 tablespoon.
Tempering:.
– Garlic, great sliced- 10 cloves (25 gms).
– Red chilllies cut-4.
– Green chillies sliced-2.
– Spring onion whites- 3-4 tablespoon.
Other Active ingredients:.
– Oil for deep frying + 2-3 tbsp for sautéing.
– Spring onion greens for garnish-3 tbsp.
Preparation:.
– Cut the boneless fish fillets into bite sized pieces and marinate with the items specified. Reserve for around 30 mins.
– Take a little bowl and add all the ingredients for the sauce mix to the bowl. Blend well and reserved for use later.
– Now, to fry the fish pieces, heat oil in a deep pan or kadhai and drop the battered fish pieces side by side to not crowd the pan. Do not stir it for a minute. Now fry on medium heat for another 4-5 minutes till light brown. Repeat for the balance pieces. Eliminate and set aside on a plate.
– Slice the spring onion whites and the green chillies.
– Likewise fine slice the peeled garlic and cut the dried red chillies into 1" pieces.
– Slice the spring onion greens to be used as garnish.
Process:.
– Heat oil in a wok/kadhai and add the carefully chopped garlic. Mix and sauté for around 30 secs and after that include the sliced spring onion whites, cut red chillies and the sliced green chillies. Mix and fry on medium heat for another 2 mins till the garlic is light brown in color.
– Now include the sauce mix and mix & cook on low heat for 1-2 minutes.
– Now include the fried fish pieces and cook on high heat for 2 mins to coat the pieces.
– Garnish with chopped spring onion greens.
– Mix and stir fry for 30 secs and serve hot.
