Sev Ki Sabzi is a fast & instant sabzi, best for your lazy weeknight dinners especially when you don't have much fresh fruit and vegetables at home however still desire a delicious meal. The distinct texture and technique will have you pleased in no time. So, offer it a try!

SEV KI SABZI

Components

1 cup sev, difficult and thick
1/2 tbsp oil
1/4 tsp asafoetida
1/2 tsp onion seeds (kalonji).
2-3 cloves.
1 medium onion, finely chopped.
2 green chillies.
Salt to taste.
1/4 tsp turmeric powder.
1/2 tsp red chilli powder.
1 tsp tamarind pulp.
2 tsps grated jaggery.
7-8 fresh coriander sprigs.
Green capsicum strips for garnishing.

Technique.

1. Heat oil in a non-stick pan, add asafoetida, onion seeds, cloves and onion, mix and sauté till the onion is lightly browned.
2. Finely chop green chillies and include together with 1/2 cup water, salt, turmeric powder, red chilli powder, tamarind pulp and jaggery. Mix well and bring the mix to a boil.
3. Include sev and blend well. Cook for a minute.
4. Roughly chop coriander sprigs and add. Mix well and prepare for 2-3 minutes.
5. Transfer into a serving bowl, garnish with capsicum strips and serve hot.
